Ingredients:
- 3 Cups of Chopped Asparagus
- 1 C of baby tomatoes halved
- 1 Tbsp of Balsamic VInegar
- 1 Tbsp of Olive Oil
- 2 Tbsp of Raw Pine nuts
- Salt & Pepper to taste
Directions:
- Preheat stove top to medium heat.
- Chop asparagus into 1 inch pieces
- Cut the baby tomatoes in halves
- Drizzle olive oil into the pan and add the asparagus/tomatoes.
- Turn to medium to high heat and let simmer for about 10 minutes.
- Sprinkle in salt/pepper.
- Check veggies frequently. Remove from heat when tomatoes are soft and bursting and asparagus is dense enough to stick a fork in.
- Place on serving dish.
- Drizzle with Balsamic Vinegar and top with Pine nuts.
- Serve and enjoy!!
