Made with ripe mashed bananas, dark brown sugar, melted butter, and crunchy walnuts, this homemade banana nut bread is soft, tender, and packed with warm cinnamon flavor.

Ingredients
1 ¾Cchopped, raw, unsalted walnuts
Cooking spray
1 ½cupsall-purpose flour
1tsp.baking soda
1/2tsp.ground cinnamon
1/2tsp.kosher salt
2large eggs
3/4cupdark brown sugar
6Tbspunsalted buttermelted & cooled
2Cmashed ripe bananas4 large bananas
2tsp.pure Almond extract
Instructions
Preheat the oven to 325°. Place the rack in the center of the oven. Spread walnuts on a baking sheet. Bake until golden in the center (8-10 minutes). Let cool, then coarsely chop and set aside. Set aside 1/4 cup walnuts.
Increase the oven to 350°. Grease a metal loaf pan with cooking spray and line with parchment.
In a medium mixing bowl- whisk flour, baking soda, cinnamon, and salt to combine.
In a separate large bowl- whisk eggs, brown sugar, and butter until smooth. Add bananas and vanilla, then whisk until well combined (slightly lumpy). Fold in dry ingredients, then fold in 1 ½ C toasted walnuts.
Pour batter into greased pan; smooth top with a rubber spatula. Scatter ¼ C raw walnuts on the top.
Bake bread until risen & golden brown on top (approx 50-60 minutes).
