Egg & Hashbrown Breakfast Casserole Recipe: Easy Cheesy Sausage Breakfast Bake

Packed with fluffy eggs, crispy hashbrowns, savory sausage or bacon, melted cheddar cheese, and colorful bell peppers, this cheesy breakfast bake is perfect for holidays, brunch gatherings, or weekend meal prep.

Ingredients

  • 6 eggs
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 1 30 0 z bag frozen shredded hashbrowns thawed
  • 1 pound breakfast sausage or bacon cooked and crumbled
  • 1 onion diced
  • 1 bell pepper diced
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp pepper
  • 2 TBSP chopped parsley
  • Cooking spray

Instructions

  • Preheat oven to 375*
  • Grease a 9 x 13 baking dish with cooking spray
  • Cook sausage or bacon, drain fat and and crumble
  • Spread thawed hashbrowns in the prepared casserole dish
  • Add sausage or bacon, onion and bell pepper
  • Add 1 ½ cups shredded cheese
  • In a large bowl whisk together eggs, milk, garlic powder, salt and pepper
  • Pour on top of layered ingredients
  • Sprinkle remaining cheese on top
  • Cover with foil and cook 30 minutes
  • Remove foil and cook an additional 20 minutes
  • Garnish with parsley
