Rissy’s Cheesy Potatoes: Easy Cheesy Red Potato Casserole with Sour Cream and Cheddar

Ingredients

  • 1.5-2 lbs small red potatoes quartered
  • 1/2 C sour cream
  • 8 Tbsp of butter sliced
  • 1 tsp Garlic salt
  • 1 tsp salt
  • 1 tsp pepper
  • 2 C shredded cheddar cheese

Instructions

  • Preheat oven to 400 degrees. Spray or butter a 9x13 baking dish.
  • Quarter/Dice potatoes and place in pan.
  • Place 8-10 dollops of sour cream on top
  • Place 8-10 slices of butter in between sour cream.
  • Sprinkle Garlic salt, salt, pepper on top.
  • Cover with foil for 1-1.5 hours.
  • When potatoes are soft, gently stir potatoes in the baking dish and sprinkle with cheese.
  • Put back in oven and bake uncovered for 15 minutes.
