3lbsYukon gold potatoes
4hard boiled eggschopped
4celery stalkschopped
½cupdill pickle relish
1small jar diced pimentos
1large sweet oniondiced
2poblano peppersdiced

Instructions
Wash potatoes and cover with water in a large pot.
Bring to a boil and simmer for about 40 minutes, until tender.
Drain and allow potatoes to cool.
