How to Make Zucchini Boats

Start by cutting the zucchini lengthwise and scooping out the centers to create the “boats.” A grapefruit spoon works especially well for this because of its serrated edge.

Bake the zucchini shells briefly to soften. Meanwhile, brown your ground turkey or beef in a skillet. Stir in marinara sauce and a sprinkle of mozzarella for added flavor.

Fill each zucchini with the meat mixture, top generously with cheese, and bake until melted and bubbly. Serve hot and enjoy this lighter Italian classic.
