Serves 4
1 lb of Ground Turkey or Ground Beef
½ jar of Marinara sauce
2 Large Zucchini
Shredded Mozzarella cheese
- Preheat the oven to 400 degrees. Coat a 9×13 baking dish with olive oil or cooking spray.
- Cut the zucchini in half lengthways, then trim off the stem ends. Use a spoon (We use a grapefruit spoon because the rugged edges are awesome) to carefully scoop the inside of the zucchini out.
- Sprinkle with salt, pepper, and garlic salt. Arrange the zucchini in the dish. Put Zucchini in the oven for 15 minutes.
- Heat a little olive oil in a large skillet. Add the ground turkey or beef to the skillet, cook on medium to high heat.
- When the meat is slightly brown- Add in the marinara sauce. Sprinkle in some cheese.
- Remove Zucchini from the over. Spoon the ground meat into each Zucchini boat. Top with cheese.
- Place Zucchini boats back in the oven for 15-20 minutes. Serve & enjoy!! 🙂
