(Mexican Food Edition)
Serves 4
1 lb of Ground Turkey or Ground Beef
1 pkg of Taco Seasoning (Siete or Mccormick)
1 can of Black beans
1 can of rotel tomatoes
2 Large Zucchini
Mexican style cheese
- Preheat the oven to 400 degrees. Coat a 9×13 baking dish with olive oil or cooking spray.
- Cut the zucchini in half lengthways, then trim off the stem ends. Use a spoon (We use a grapefruit spoon because the rugged edges are awesome) to carefully scoop the inside of the zucchini out.
- Sprinkle with salt, pepper, and garlic salt. Arrange the zucchini in the dish.
- Heat a little olive oil in a large skillet. Add the ground turkey or beef to the skillet, cook on medium to high heat.
- When the meat is slightly brown- Add in the beans, tomatoes, and taco seasoning (follow directions on the package). Sprinkle it with cheese and stir till combined.
