Photographing your moments in San Francisco, California

(Mexican Food Edition)
Serves 4

1 lb of Ground Turkey or Ground Beef
1 pkg of Taco Seasoning (Siete or Mccormick)
1 can of Black beans
1 can of rotel tomatoes
2 Large Zucchini
Mexican style cheese

  1. Preheat the oven to 400 degrees. Coat a 9×13 baking dish with olive oil or cooking spray.
  2. Cut the zucchini in half lengthways, then trim off the stem ends. Use a spoon (We use a grapefruit spoon because the rugged edges are awesome) to carefully scoop the inside of the zucchini out. 
  3. Sprinkle with salt, pepper, and garlic salt. Arrange the zucchini in the dish.
  4. Heat a little olive oil in a large skillet. Add the ground turkey or beef to the skillet, cook on medium to high heat. 
  5. When the meat is slightly brown- Add in the beans, tomatoes, and taco seasoning (follow directions on the package). Sprinkle it with cheese and stir till combined.
