3 lbs. Yukon gold potatoes
4 hard boiled eggs, peeled and chopped
4 celery stalks, chopped
½ cup dill picl;e relish
1 small jar diced pimentos
1 large sweet onion, diced
2 poblano peppers, diced
2 Tbsp salt
1 tsp pepper
1 cup mayonnaise
2 Tbsp yellow mustard
Wash potatoes and cover with water
Bring to a boil and simmer 40 minutes, till tender
Drain and set potatoes aside to cool
Once cooled, peel the potatoes
Add the rest of the ingredients, breaking up the potatoes with your spoon
Refrigerate one hour or longer before serving
